INGREDIENTS
1 large eggplant
1½ tablespoons tahini
½ teaspoon cumin
juice of ½ lemon
1 garlic clove, crushed
1 tablespoon Hemp Foods Australia Hemp Oil
sea salt and freshly grated black pepper
Hemp Foods Australia Hemp Seeds and pomegranate seeds, to serve
METHOD
Cook eggplant on a grill or barbeque for 15 minutes, or until the outside is charred and the inside is soft. Slice eggplant open and scoop flesh into a bowl. Add tahini, cumin, lemon juice, garlic, hemp oil, and salt and pepper and mix well.
Serve topped with hemp seeds and pomegranate seeds.
