INGREDIENTS
300 ml filtered water
6 slices fresh ginger
1 tbsp Manuka honey
2 cm piece cinnamon bark
5 cm strip lemon peel
½ lemon, squeezed
slice of lemon (optional)
sprig of thyme to serve (optional)
METHOD
Place all ingredients in small pan, bring to the boil, turn off heat and steep for 5 minutes.
Strain and pour into a cup, add a squeeze of lemon juice and sprig of thyme.
