INGREDIENTS
1/4 cup cacao powder
1/2 cup almond flour
1/2 tsp baking powder
1/2 cup erythritol
Pinch of salt
1/4 cup Vitawerx Choc Coconut Rough, melted
1/2 cup butter
2 eggs
For cheesecake:
250g cream cheese
1/4 cup sweetener
1 tsp vanilla
1 egg
METHOD
Combine cacao, almond flour, baking powder, sweetener and salt in a bowl
In a separate bowl melt chocolate and butter together (either in a double boiler or in 20 second intervals in microwave – once warmed through then stir until the chocolate melts – make sure it’s not too hot)
Stir in chocolate mixture to the eggs. Combine with dry ingredients
For the cheesecake: combine cream cheese, sweetener, vanilla and egg. Mix until combined.
Line a 20cm square pan with parchment paper then add most of the brownie mixture (reserve about a 1/4 cup)
Pour cheesecake over the brownie layer
Add remaining brownie batter in 5 dollops then use a skewer to swirl the batter
Bake at 180°C for approximately 20 minutes. Let them set for 1 hour before serving
