Spiced Walnut and Date Bliss Balls

REP TIME 30 mins SERVES Makes approx 20 balls COOK TIME 1-2 hours DIFFICULTY Moderate

 

INGREDIENTS


  • 200g dates, pitted

  • 100g sultanas

  • 1 tsp vanilla powder

  • 1 tsp cinnamon

  • 1 tsp allspice

  • 1/2 tsp ground cloves

  • Zest and juice of 1/2 lemon

  • 50ml coconut oil

  • 150g almond meal

  • 100g walnuts

METHOD


  1. Place dates, sultanas, vanilla powder, cinnamon, allspice, ground cloves and lemon juice and zest in a large bowl. Add 200ml hot water and mix together until dried fruit is coated in spices. Set aside to soak for 30 minutes.

  2. Meanwhile, add walnuts to a blender and blend until a crumb-like texture forms. Transfer to a flat plate or board and set aside.

  3. Transfer dried fruit and spice mixture into the blender and blend until a smooth paste forms. Return the paste to the bowl, then add coconut oil and almond meal, mixing well to combine. If it’s a cool day, melt coconut oil over low heat beforehand.

  4. Using a teaspoon, scoop up a small amount of mixture, roll between your hands to form a small ball the size of a cherry tomato, then roll in walnut crumbs. Place bliss ball on a flat tray and repeat process until you have used up the mixture. Place tray in the fridge for a couple of hours or until bliss balls have firmed up, then serve.
